History
Chicken Kyiv is an internationally recognizable restaurant dish. Its origins have several competing accounts, so we do not credit one inventor without strong evidence.
Today
Briefly fry the coated chicken, then finish it in the oven. Chill the butter well before wrapping.
Ingredients
- 700 g boneless chicken breast
- 100 g butter
- 15 g dill
- 2 eggs
- 80 g all-purpose flour
- 140 g breadcrumbs
- 150 ml neutral cooking oil
Method
- Mix butter with dill and chill in small sticks.
- Divide chicken into broad pieces and gently pound; the base batch makes four.
- Season and wrap the butter completely in chicken, leaving no gaps.
- Chill for 20 minutes.
- Coat in flour, beaten egg, and breadcrumbs, then repeat the egg and crumbs.
- Fry until golden on every side.
- Bake at 355°F (180°C) for 20–25 minutes.
- Use a thermometer: the center of the chicken must reach 165°F (74°C).
How to serve
Cut carefully: the butter inside is hot. Serve with potatoes or a green salad.
